Oatmeal Breakfast Recipe | Oatmeal Hash Brown

Ingredients:



  • 200 g spinach, roughly chopped 

  • 1 medium-size red onion, chopped lengthwise

  •  2 cups oatmeal

  •  3 eggs

  •  1/2 tsp salt or salt to taste

  •  1 tsp chilli flakes

  •   2 - 3 tbsp oil  



Method:


  1. In a large bowl, add in the roughly chopped spinach leaves, onion, 1 cup of oatmeal, eggs, salt & chilli flakes. 

  2. Mix well all the ingredients, and then add one more cup of oatmeal. 

  3. Give that a good mix and let it rest for about 15 - 20 minutes. 

  4. After 20 minutes, mix one more time and keep that aside. 

  5. Heat about the oil in a large, heavy skillet over medium-high heat.  

  6. When oil is sizzling hot, reduce the heat to medium-low. 

  7. Spoon the oatmeal mixture into the pan, spread it into a circular and 1/2 inch thick layer. 

  8. Cover the pan and cook until nicely browned & crisp on the bottom, then flip over and brown on the other side and serve immediately.  

  9. This mixture makes 12 pieces of oatmeal hash browns.
