Oatmeal Breakfast Recipe | Oatmeal Hash Brown
Ingredients:
200 g spinach, roughly chopped
1 medium-size red onion, chopped lengthwise
2 cups oatmeal
3 eggs
1/2 tsp salt or salt to taste
1 tsp chilli flakes
2 - 3 tbsp oil
Method:
In a large bowl, add in the roughly chopped spinach leaves, onion, 1 cup of oatmeal, eggs, salt & chilli flakes.
Mix well all the ingredients, and then add one more cup of oatmeal.
Give that a good mix and let it rest for about 15 - 20 minutes.
After 20 minutes, mix one more time and keep that aside.
Heat about the oil in a large, heavy skillet over medium-high heat.
When oil is sizzling hot, reduce the heat to medium-low.
Spoon the oatmeal mixture into the pan, spread it into a circular and 1/2 inch thick layer.
Cover the pan and cook until nicely browned & crisp on the bottom, then flip over and brown on the other side and serve immediately.
This mixture makes 12 pieces of oatmeal hash browns.
